Discovering our wine range means stepping into the heart of our work. All of the wines are organic and entirely vinified by us, exclusively from our own grapes. All 16 hectares of vineyards are located in Castel De’ Britti, surrounding the winery and within the Regional Park dei Gessi Bolognesi, in the “Colli Bolognesi” appellation. Our many labels reflect our passion for experimentation and our desire to express the territory in all its facets. We mostly work with single-variety wines, with a few exceptions.

Narciso

Chardonnay Emilia P.G.I. Traditional Method Sparkling (Spumante)
With the 2021 harvest and the opening of the new winery, the first experiments with the traditional method began. After three years of waiting, Narciso was born: a blanc de blancs traditional-method sparkling wine, elegant and a little vain—just like its name.
Around mid-August, the grapes for the traditional method are harvested from the flat Chardonnay vineyard, located at the end of the Idice Valley. The soil, with a medium texture and sufficient depth, ensures optimal vegetative conditions for the vineyard, balancing vigor and plant health. As with all our vineyards, it is managed organically, with constant attention to the wellbeing of both the soil and the vines.
The Chardonnay grapes are pressed as whole clusters, the fermentation and the subsequent months of ageing take place in stainless steel tanks. Tirage, for the second fermentation and the development of the bubbles, occurs at the beginning of the year following the harvest. A crucial step is the ageing period of three years on lees. After this long rest, the bottles are disgorged and left without dosage, resulting in a dry wine with no residual sugar.
Narciso is a sparkling wine that beautifully expresses all the characteristics of Chardonnay, with aromas of white and yellow flowers enhanced by three years of ageing on the lees and by its fine bubbles. The primary aromas of the grape, fresher and fruitier in character, intertwine perfectly with the more evolved notes developed during fermentation and ageing, reminiscent of brioche and bread crust, creating an intriguing balance.

Unico

Rosè Emilia P.G.I. Traditional Method Sparkling (frizzante)

“Unico” unique in name and in fact, a sparkling wine born from experimentation and the desire to dare. It is a sparkling wine made with the traditional method from the 2021 vintage, the first year in which we began producing traditional-method sparkling wines. It is a blend of Barbera, Grechetto Gentile, and Chardonnay, breaking with our usual practice of vinifying each variety separately.

The grapes for this wine come from three different vineyards: a flat Chardonnay vineyard at the bottom of the Idice Valley, the youngest Barbera plot, and the most recently planted Grechetto Gentile vineyard, located just below the winery terrace. The latter two are both hillside vineyards with a western exposure.
All three vineyards are farmed organically, with the utmost care given to the wellbeing of both the soil and the vines.
Barbera, Chardonnay and Grechetto Gentile are vinified together in a single process without maceration. Fermentation and the following months of ageing take place in stainless steel tanks. Tirage, for the second fermentation and the development of the bubbles, occurs at the beginning of the year following the harvest. A crucial step is the subsequent ageing of three years in bottle, on the lees. After this long rest, the bottles are disgorged and dosed with 1.5 g/L of sugar, rounding and completing the palate.
Unico is unique also in the tasting experience. Its color is an intense brick shade, original and surprisingly deep for a rosé. On the nose it is rich, with notes of ripe red fruits; on the palate the sensations unfold in a pleasant balance, accompanied by light bubbles that harmonize the whole.

Lieto

Grechetto Gentile Emilia P.G.I. Sparkling (Spumante)
“Lieto” is a white Brut sparkling wine produced using the Charmat method and made from 100% Grechetto Gentile grapes, the native variety of the Bolognese hills. It is a fresh and cheerful wine, just like its name.
The grapes for this wine come from a young and promising vineyard planted on medium-textured soil, where the vigorous influence of clay is moderated, resulting in grapes that are more balanced and less inclined to give the wine overly harsh elements. Located in one of the coolest areas of the estate, this vineyard yields fragrant and well-balanced grapes.
The grapes, harvested in mid-August, are vinified as white wine in stainless steel tanks. At the end of the first fermentation, the wine is transferred to autoclaves for the second fermentation and the development of the bubbles.
This is a long Charmat method, as the wine rests on the lees in autoclave for about nine months before bottling. Finally, before being released, it is aged in bottle for a few months.
The wine shows a beautiful golden color. The body of Grechetto Gentile is balanced by the bubbles and its freshness. The nose is intense and complex, where notes of bread-making and fermentation blend with a more fruity side, reminiscent of apple.

Allegro

Barbera Rosè Emilia P.G.I. Sparkling (Spumante)
Brut rosé sparkling wine, produced using the Charmat method from 100% Barbera grapes, which allows us to obtain a charming and interesting wine, whose name is certainly not accidental.

Grapes are vinified using white winemaking process in stainless steel tanks. At the end of the first fermentation, the wine is transferred to autoclaves for the second fermentation and the development of the bubbles. This is a long Charmat method, as the wine rests on the lees in autoclave for about nine months before bottling. Finally, before being released, it is aged in bottle for a few months.
Although the grapes are vinified without maceration, the color becomes quite intense and vivid, differing from classic rosé sparkling wines. The typical Barbera characteristics are recognizable: bright acidity and fresh, young red fruits, all enhanced by fine bubbles and the aging on lees, which adds subtle fermented notes.

Ciparisso

Grechetto gentile Emilia P.G.I. Sparkling (spumante)
Brut white sparkling wine produced using the Charmat method with 100% Grechetto Gentile grapes, the native variety of the Bolognese hills. Very fine and delicate bubbles, given by a moderate pressure in the bottle.
The grapes for this wine come from a young and promising vineyard planted on medium-textured soil, where the vigorous influence of clay is moderated, resulting in grapes that are more balanced and less inclined to give the wine overly harsh elements. Located in one of the coolest areas of the estate, this vineyard yields fragrant and well-balanced grapes.

The wine has a beautiful deep straw-yellow color, with a complex and interesting nose dominated by fresh green apple aromas. On the palate, it shows bright acidity and good balance; the body, typical of the grape variety, is well harmonized by the bubbles, making it suitable for an aperitif, even when paired with cold cuts and cheeses.

Methe

Chardonnay Emilia P.G.I.

Methe is a still white wine made exclusively from Chardonnay grapes. It preserves all the elegance and aromas of this famous variety, while never being ordinary, and reflecting the warm climate in which it grows.

The vineyard lies on flat land at the bottom of the Idice valley. The soil has a medium texture and good depth, making it well suited to keep the vines in healthy vegetative conditions without excessive vigor. Harvest usually takes place in the second half of August.
After the mid-August harvest, the grapes are gently pressed, and allowed to ferment slowly at a controlled temperature without any maceration. Malolactic fermentation is not carried out, and the wine is aged in stainless steel for about nine months before being bottled.
Methe is an elegant wine with a refined bouquet, featuring a rich array of floral and tropical fruit aromas, along with subtle sweet notes and a hint of toastiness. On the palate it is full and enveloping, well balanced, with a long and persistent finish.

Giacinto

Grechetto Gentile Emilia P.G.I.

Made from the most typical grape variety of the Colli Bolognesi, Grechetto Gentile, Giacinto captures all the sunshine that warms these lands in summer. A still white wine that surprises and expresses the structure and aromas typical of the variety.

The grapes for this wine come from a young and promising vineyard planted on medium-textured soil, where the vigorous influence of clay is moderated, resulting in grapes that are more balanced and less inclined to give the wine overly harsh elements. Located in one of the coolest areas of the estate, this vineyard yields fragrant and well-balanced grapes.
Vinified as a white wine in stainless steel through gentle pressing and slowly fermented at a controlled temperature, the secret of this wine lies in its careful aging, which softens the edges and partly reduces the bitter notes that characterize this variety. It is aged in stainless steel and further refined in bottle.
A wine with a very intense golden color. It is highly distinctive, with an aromatic bouquet featuring citrus notes, such as grapefruit, along with hints of dried fruit. On the palate it shows considerable body, a touch of tannin, and a pleasantly bitter note on the finish, resulting in an overall well-balanced wine.

Giulietto

Rosè Barbera Emilia P.G.I.
A rosé wine made from Barbera grapes. Not your usual rosé, but a fun, fresh and fragrant wine, with a color that brings joy—perfect for summer evenings or for rediscovering the carefree spirit of summer during the winter months.
Single-variety Barbera vineyard, still relatively young, planted on soil rich in gray clay, which gives the grapes excellent structure. The vineyard is situated on a hillside, with a west-facing exposure. Harvest usually takes place at the end of August.
White vinification of red grapes (Barbera) at controlled temperatures (higher than those used for white wines but lower than those for red vinification). Vinification and aging take place in stainless steel, followed by a few months of rest in the bottle.
What stands out first is its intense and lively color, almost a light red. On the nose, notes of citrus, passion fruit, and wild strawberries make it perfect for summer days, where its vibrant freshness provides a refreshing note. During a meal, it can accompany simple dishes as well as pair nicely with moderately complex ones.

Altea

Barbera Emilia P.G.I.
Altea is a red wine with a firm yet balanced character: structured, yet light, capable of standing out without excess.
Single-variety vineyard, planted in 2004 on soil rich in gray clay, which gives the grapes excellent structure. The vineyard is located on a hillside, with a west-facing exposure. Harvest usually takes place at the beginning of September.
Red vinification of Barbera grapes, with maceration time lasting between 15 and 30 days. The entire process takes place at controlled temperatures in stainless steel tanks to ensure a proper progression of both alcoholic and malolactic fermentations. Aged in stainless steel with frequent bâtonnage until bottling. Racking is kept to a minimum to reduce oxygen exposure and to take full advantage of the beneficial action of the fine lees, which not only enhance the structure and texture of the wine but also help maintain lower sulfite levels.
A wine with an elegant texture, it strikes with its fruity notes. On the palate, it reveals its softness, supported by a lively freshness that carries the wine through a long finish. Excellent as an all-around table wine, it is also enjoyed as an aperitif.

Giulio

Merlot Emilia P.G.I.
Giulio is a bold red wine—firm and structured when needed, yet soft in all the right moments. A wine that captivates without losing its essence, just like the person whose name it bears.
Single-variety vineyard, planted in 2005 on soil rich in gray clay, which gives the grapes excellent structure. The vineyard is located on a hillside, with a west-northwest facing exposure. It is known as the “Oak Vineyard” for the imposing tree that stands at its base. Harvest usually takes place in September.
Red vinification of Merlot grapes, with maceration time lasting between 15 and 30 days. The entire process takes place at controlled temperatures in stainless steel tanks to ensure a proper progression of both alcoholic and malolactic fermentations. Aged in stainless steel with frequent bâtonnage until bottling. Racking is kept to a minimum to reduce oxygen exposure and to take full advantage of the beneficial action of the fine lees, which not only enhance the structure and texture of the wine but also help maintain lower sulfite levels.
An austere wine, with fruity aromas followed by a pleasantly spicy note that becomes more pronounced towards the end of the mouth. Its initial firmness and significant structure make it well-suited to pair with elaborate dishes, especially rich meat courses.

Dioniso

Cabernet Sauvignon P.G.I.

Dioniso embodies the very idea of a red wine: bold and full-bodied, with present yet balanced tannins, and a natural aptitude for aging. A tribute to a figure that celebrates wine in all its power.

Several vineyards contribute to the creation of this wine. All are single-variety and planted between 2004 and 2005 on soil rich in gray clay, characteristic of the calanchi hills of the Bologna area, which gives the grapes the structure and character essential for producing this important wine. The vineyards are situated on hillsides with sometimes steep slopes, with a primarily west-facing exposure, occasionally reaching south. They are gently touched by the shade of the great ancient cypress that dominates the valley and serves as the symbol of Tomisa. The harvest is usually in September.

Red vinification of Cabernet Sauvignon grapes, with maceration time lasting between 15 and 30 days. The entire process takes place at controlled temperatures in stainless steel tanks to ensure a proper progression of both alcoholic and malolactic fermentations. Aged in stainless steel with frequent bâtonnage until bottling. Racking is kept to a minimum to reduce oxygen exposure and to take full advantage of the beneficial action of the fine lees, which not only enhance the structure and texture of the wine but also help maintain lower sulfite levels.
The Cabernet reveals power and charm after a few years in the bottle. Its color is intense, accompanied by an aroma marked by bold fruit notes and, over time, more evolved scents ranging from coffee to chocolate and tobacco. A wine of great persistence, it pairs well with well-structured meals but is also appreciated as a contemplative, “meditation” wine.

Ambrosia

Grechetto Gentile Emilia P.G.I. Late Harvest
Ambrosia is a remarkable dessert wine, truly unconventional. Sweet but never cloying, it never takes a back seat and expresses itself with confidence and personality.
The old Grechetto Gentile vineyard, trained using Guyot, after nearly forty years of dedicated service, provided its final grapes in 2022 to create Ambrosia. The grapes remained on the vine until November, when they were harvested after beginning to dry naturally.
White vinification of grapes left to dry on the vine until November. The alcoholic fermentation in stainless steel, which is not completed, is followed by an additional two and a half years of aging in the tank. The wine is bottled and allowed to rest for a few months in 0.35 L bottles.
A dessert wine that retains the typical characteristics of its grape, Grechetto Gentile. Intense amber color, reminiscent of the nectar of the gods from which it takes its name. In the nose it presents equally striking and complex aromas, especially of dried fruit. On the palate, the sweetness of the residual sugars is evident but never dominant or cloying. It also shows good structure with fine tannins, making it very interesting and perfect for experimenting with different food pairings…
