Welcome in our farm, Azienda Agricola Tomisa

We produce organic wines, respecting the qualities and with tight bond with the territory. Our vineyards are inside the regional park “Parco Regionale dei Gessi Bolognesi e dei Calanchi dell’Abbadessa”.

The characteristic configuration of the territory and the protection given by “calanchi” (a specific land configuration) make our wines unique. All our wines are produced without blending grapes, only from our vineyards.

Altea

Barbera Emilia P.G.I. Organic Wine

Ruby wine color with purplish nuances, dry taste, full-bodied, harmonious, rightly tannic and with a good acidity. Pairings: all meal.

Characteristics of the vineyard

Monovarietal vineyard, planted in 2004 on soil rich in grey clay that gives the grapes an excellent structure. The vineyard is hilly while the exposition looks west. The vineyard counts a little less than 3600 plants per hectare.

Vineyard work

The organic management of the vineyard requires a particular care for the well-being of the individual plant and especially the vitality of the soil. For this, particular attention is given to the management of the soil, with conservative working and sowing of crops to ensure the widest biodiversity in the vineyard. The pruning, winter and summer, are always aimed at maintaining the maximum well-being of the plant.

Winemaking

Wine produced in steel, with a maceration time on the skins between 15 and 30 days. The whole process takes place at controlled temperatures to ensure a regular course of the alcoholic and malolactic fermentation.

Aging

Refined in steel with frequent batonnages until bottling. We try to limit the rackings in order not to expose the wine to oxygen and to be able to exploit as long as possible the beneficial action of noble lees that, besides improving the structure and texture of the wine, also contribute to lower sulphite levels.

Giulio

Merlot Emilia P.G.I. Organic Wine

Strong ruby wine color with orange nuances, clear and little transparent. Intense to the nose, fruity with notes of berries, and spices in the ending that recall black pepper. In the mouth the tannin is present. Wine suitable for the whole meal, it pairs well with elaborate dishes, roasts, stews and game.

Characteristics of the vineyard

Monovarietal vineyard, planted in 2004 on soil rich in grey clay that gives the grapes an excellent structure. The vineyard is hilly while the exposure is between West and North. The vineyard, called “of the oak” for the imposing tree that rises at its feet, counts slightly less than 3600 strains per hectare.

Dioniso

Cabernet Sauvignon Emilia P.G.I. Organic Wine

Strong ruby wine color, with purplish nuances, full-bodied, warm, tannic, aromatic, with a delicate and characteristic herbaceous taste.

Characteristics of the vineyard

There are different vineyards that contribute to the birth of this wine. All monovarietal and planted between 2004 and 2005, on soil rich in grey clay that characterizes these areas of the hills of Bologna and gives the grapes the essential structure and character for the production of this important wine. The location is hilly with important slopes, while the exposure looks West and in some cases to the South. The vineyards, with just under 3600 vines per hectare, are brushed by the shade of the great secular cypress that dominates the valley and is the symbol of Tomisa.

Giulietto

Rosé Emilia P.G.I. Organic Wine

Young wine, in taste an color, it presents all the characteristics of the vine variety, white wine making in purity, the fruity notes, grapefruit and watermelon, make it a delicate, pleasant wine but with personality.

The barbera grapes are vinified in stainless steel with white winemaking method. The fermentation temperature is controlled, never too low, but still lower than the one held for the vinification of red wines.

Giacinto

Grechetto Gentile Emilia P.G.I. Organic Wine

Strong straw yellow wine, crystalline, intense to the nose, characterized by floral and ripe fruit perfumes, especially banana and peach, followed by spices like cinnamon. At the end, a scent of chestnut honey stands out. It’s warm to the taste, supple, fresh and sapid, with a light tannic note. Harmonious and balanced, it’s a good pairing with fish dishes, even if they are mildly spiced, but also with medium-elaborated main courses.

The old vineyard raised at GDC, after almost forty years of honorable service in 2022 has produced the last grapes to give birth to Giacinto. But you can rest assured: a new vineyard, modern, well cared for and raised from the first moments is already ready to keep alive the tradition of this wine and – why not? – to give it new and attractive characteristics.

White wine making, soft pressing of the grapes and slow fermentation at a controlled temperature, the secret of this wine lies in the careful aging that leads it to blunt the edges and removes some of the bitter notes that characterize this grape variety.

Aging

The continuous batonnage, the temperature control and the extreme attention in performing the few transfers are the key elements of the aging of this wine.

Ciparisso

Grechetto gentile Emilia P.G.I. Organic Wine

Slightly sparkling, this Grechetto Gentile presents a strong straw yellow color, and it’s distinguishable for the elegant fruity note, typical of this vine variety native of the area. There are specially banana, apple and summer fruits notes. In the mouth it’s supple, warm and pleasantly fresh, with a delicate pungency. Harmonious and balanced wine, it’s perfect for aperitives but also to be tasted during the meal with simple dishes.

Characteristics of the vineyard

The young and promising vineyard that provides these grapes, is located on a medium textured soil in which the action of the clay is mitigated and the grapes that are harvested are less likely to give elements of hardness to the wine. Located in one of the coldest parts of the winery, this vineyard offers fragrant and well-balanced grapes

Winemaking

White winemaking at a controlled temperature, the prise de mousse is carried out with the Charmat method during the first fermentation to try to make a wine in which all the aromas coming from the vineyard are recognizable.

Aging

Aged for more than 6 months on lees before being bottled, and SO2 is added only at the time of bottling.

Methe

Chardonnay Emilia P.G.I. Organic Wine

Straw yellow color, it reflects the sun of our area. Quite intense and fruity smell, delicate and elegant. Notes of dry fruits are present (light scent of hazelnut), vanilla, quince jam, raisin and cinnamon.

Characteristics of the vineyard

Vineyard at the feet of the hills, located at the bottom of the valley of Idice, the soil has a medium texture, deep, suitable to always keep the vineyard in good vegetative conditions but without exceeding vigor.

White winemaking, soft pressing of the grapes and slowly fermented at a controlled temperature. It does not carry out malolactic fermentation.

Aging

Aged for over 6 months in stainless steel vats at controlled temperature.

Ambrosia

Grechetto Gentile Emilia I.G.P. late harvest 2022

A late harvest wine that preserves the typical characteristics of the grape it comes from, the Grechetto Gentile. Intense golden color and equally intense and complex aromas. On the palate, you can taste the sweetness of the residual sugars, but without it overpowering or becoming cloying. It also has a certain body and tannins, which make it very interesting and unique for this type of wine.
